Refreshing Lemon Cream Cheese Pie
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/2 cup fresh lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla extract
Whipped cream for topping (optional)
Lemon slices for garnish (optional)
Instructions:
Preheat your oven to 350Ā°F (175Ā°C).
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.
Bake the crust for 10 minutes, then remove from the oven and let it cool completely.
In a large bowl, beat the softened cream cheese until smooth.
Gradually add the sweetened condensed milk, beating until well combined.
Stir in the fresh lemon juice, lemon zest, and vanilla extract until smooth and creamy.
Pour the lemon cream cheese mixture into the cooled crust.
Refrigerate for at least 4 hours, or until the pie is set.
Top with whipped cream and lemon slices, if desired, before serving.
