Festive Cranberry Pecan Chicken Salad
Ingredients:
2 cups cooked chicken, shredded
1/2 cup dried cranberries
1/2 cup pecans, chopped
2 celery stalks, finely chopped
1/4 cup red onion, finely chopped
1/2 cup mayonnaise
1/4 cup Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon fresh lemon juice
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
In a large mixing bowl, combine shredded chicken, dried cranberries, chopped pecans, chopped celery, and chopped red onion.
In a separate small bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, honey, and lemon juice until smooth.
Pour the dressing over the chicken mixture and stir until everything is well combined.
Season with salt and pepper to taste.
Garnish with fresh parsley before serving.
Serve chilled on a bed of lettuce, in a sandwich, or with crackers.
