Crunchy Ritz Cracker Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 sleeve Ritz crackers, crushed
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/2 cup mayonnaise
2 tablespoons Dijon mustard
Fresh parsley for garnish (optional)
Instructions:
Preheat your oven to 375Ā°F (190Ā°C). Line a baking sheet with parchment paper or lightly grease it.
In a medium bowl, mix together the crushed Ritz crackers, grated Parmesan cheese, garlic powder, onion powder, paprika, and black pepper.
In another bowl, combine the mayonnaise and Dijon mustard.
Coat each chicken breast in the mayonnaise mixture, then dredge it in the cracker mixture, pressing gently to ensure the crumbs adhere.
Place the coated chicken breasts on the prepared baking sheet.
Bake for 25-30 minutes, or until the chicken is cooked through and the coating is golden and crispy.
Garnish with fresh parsley before serving if desired.
