White Chocolate Cheesecake Bars with Raspberry Sauce 

Ingredients 📋

Crust:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted

Filling:

16 oz cream cheese, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
8 oz white chocolate, melted and slightly cooled

Raspberry Sauce:

2 cups fresh or frozen raspberries
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon cornstarch
1 tablespoon water

Instructions 🥣

Preheat your oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared baking pan to form the crust.

In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and melted white chocolate until well combined.

Pour the filling over the crust and spread it evenly.

Bake in the preheated oven for 35-40 minutes, or until the center is set and the edges are lightly golden. Allow the cheesecake bars to cool completely in the pan on a wire rack.

While the cheesecake bars are cooling, prepare the raspberry sauce. In a small saucepan, combine the raspberries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture begins to simmer.

In a small bowl, whisk together the cornstarch and water until smooth. Add the cornstarch mixture to the raspberry sauce and continue to cook, stirring constantly, until the sauce thickens, about 2-3 minutes. Remove from heat and let it cool.
Once the cheesecake bars are completely cooled, lift them out of the pan using the parchment paper overhang. Cut into squares.
Drizzle the raspberry sauce over the cheesecake bars before serving.
