Savory Beef Empanadas
Ingredients:
2 cups all-purpose flour
1/2 tsp salt
1/2 cup unsalted butter, cold and cubed
1 egg
1/4 cup cold water
1 tbsp white vinegar
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1/2 lb ground beef
1/4 cup tomato paste
1 tsp ground cumin
1 tsp paprika
1/2 tsp chili powder
Salt and pepper to taste
1/4 cup chopped olives (optional)
1 egg (for egg wash)
Instructions:
In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs.
In a small bowl, whisk together egg, cold water, and vinegar. Pour into the flour mixture and mix until just combined. Form the dough into a ball, wrap in plastic, and refrigerate for 1 hour.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
Add ground beef and cook until browned. Stir in tomato paste, cumin, paprika, chili powder, salt, and pepper. Cook for 5 minutes, then stir in chopped olives if using. Remove from heat and let cool.
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll out the dough on a lightly floured surface to 1/8-inch thickness. Cut out 4-inch circles.
Place a tablespoon of the beef filling in the center of each circle. Fold the dough over the filling to form a half-moon shape and press the edges with a fork to seal.
Place empanadas on the prepared baking sheet. Brush with beaten egg.
Bake for 20-25 minutes, or until golden brown. Cool slightly before serving.
