Crispy Captain D’s Batter Dipped Fish
Ingredients
1 lb white fish fillets (such as cod or haddock)
1 cup all-purpose flour
1/2 cup cornmeal
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup cold water
1 large egg
Vegetable oil (for frying)
Lemon wedges (for serving)
Tartar sauce (for serving)
Instructions
In a large bowl, whisk together the flour, cornmeal, baking powder, salt, paprika, garlic powder, and black pepper.
In a separate bowl, whisk together the cold water and egg until well combined.
Gradually add the wet ingredients to the dry ingredients, whisking until smooth to create the batter.
Heat about 2 inches of vegetable oil in a deep skillet or large frying pan over medium-high heat until it reaches 375°F (190°C).
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, coating it evenly.
Carefully place the battered fish fillets into the hot oil, frying in batches if necessary to avoid overcrowding. Fry for 3-4 minutes on each side, or until the fish is golden brown and cooked through.
Use a slotted spoon to transfer the fried fish to a paper towel-lined plate to drain excess oil.
Serve the crispy batter dipped fish with lemon wedges and tartar sauce.
