Savory Crustless Spinach Quiche
Ingredients
1 tablespoon olive oil
1 small onion, finely chopped
3 cloves garlic, minced
5 cups fresh spinach, chopped
4 large eggs
1 cup milk
1/2 cup heavy cream
1 cup shredded Swiss cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes until fragrant.
Stir in the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and set aside to cool slightly.
In a large bowl, whisk together the eggs, milk, heavy cream, shredded Swiss cheese, grated Parmesan cheese, salt, black pepper, and ground nutmeg.
Stir the cooked spinach mixture into the egg mixture until well combined.
Pour the mixture into the prepared pie dish and spread it out evenly.
Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top.
Allow the quiche to cool for a few minutes before slicing and serving.
