Comforting Sour Cream Beef Noodle Casserole
Ingredients
12 oz egg noodles
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes, drained
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup sour cream
1 cup cottage cheese
2 cups shredded cheddar cheese
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Cook the egg noodles according to the package instructions until al dente. Drain and set aside.
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is softened, about 5 minutes.
Stir in the tomato sauce, diced tomatoes, Italian seasoning, salt, and black pepper. Simmer for 10 minutes, allowing the flavors to meld.
In a large bowl, combine the sour cream and cottage cheese. Add the cooked egg noodles and toss to coat.
Layer half of the noodle mixture in the prepared baking dish. Spread half of the beef mixture over the noodles. Sprinkle with 1 cup of shredded cheddar cheese.
Repeat the layers with the remaining noodle mixture, beef mixture, and 1 cup of shredded cheddar cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Garnish with fresh parsley before serving.
