Creamy No Bake Orange Creamsicle Cheesecake
Ingredients
Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
Filling:
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 tablespoon orange zest
1/2 cup orange juice
1 cup heavy whipping cream
1 box (3 oz) orange-flavored gelatin
1/2 cup boiling water
1/2 cup cold water
Topping:
Whipped cream (for garnish)
Orange slices (for garnish)
Instructions
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Refrigerate while preparing the filling.
In a small bowl, dissolve the orange-flavored gelatin in the boiling water. Stir in the cold water and set aside to cool to room temperature.
In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Mix in the orange zest and orange juice until well combined.
Gradually add the cooled gelatin mixture to the cream cheese mixture, beating until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Pour the filling over the prepared crust and smooth the top with a spatula.
Refrigerate the cheesecake for at least 4 hours, or until fully set.
Before serving, garnish with whipped cream and orange slices.
