Hearty Slow Cooker Beef Stew
Ingredients
2 lbs beef stew meat, cut into 1-inch cubes
1/4 cup all-purpose flour
Salt and pepper to taste
2 tablespoons olive oil
4 cups beef broth
1 cup red wine (optional)
2 tablespoons tomato paste
2 cloves garlic, minced
1 large onion, chopped
4 carrots, sliced
3 potatoes, peeled and diced
2 celery stalks, sliced
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
1 cup frozen peas
Fresh parsley, chopped (for garnish)
Instructions
In a large bowl, toss the beef stew meat with the flour, salt, and pepper until evenly coated.
In a large skillet, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes. Transfer the beef to the slow cooker.
In the same skillet, add a little more oil if needed and sauté the chopped onion and minced garlic until softened, about 3-4 minutes. Transfer to the slow cooker.
Add the beef broth, red wine (if using), tomato paste, carrots, potatoes, celery, thyme, rosemary, and bay leaves to the slow cooker. Stir to combine.
Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef and vegetables are tender.
About 30 minutes before serving, stir in the frozen peas and cook until heated through.
Remove the bay leaves before serving. Garnish with chopped fresh parsley.
