Classic County Fair Funnel Cakes
Ingredients:
2 large eggs
1 1/2 cups milk
2 cups all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
Vegetable oil (for frying)
Powdered sugar (for dusting)
Instructions:
In a large bowl, beat the eggs and milk together until well combined. Add the vanilla extract and mix.
In another bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
Heat about 1 inch of vegetable oil in a large skillet or deep fryer to 375Ā°F (190Ā°C).
Pour the batter into a funnel, covering the spout with your finger to prevent it from flowing out. If you donāt have a funnel, you can use a squeeze bottle or a pastry bag with a round tip.
Hold the funnel over the hot oil and release your finger, moving the funnel in a circular motion to create a lacy pattern.
Fry the funnel cake for about 2-3 minutes on each side, or until golden brown and crispy. Use tongs to carefully flip the cake.
Remove the funnel cake from the oil and drain on paper towels.
Dust with powdered sugar before serving.
