Simple and Delicious Vegetable Casserole
Ingredients
2 cups broccoli florets
2 cups cauliflower florets
2 cups sliced carrots
1 cup frozen peas
1 cup sliced mushrooms
1 can (10.5 oz) condensed cream of mushroom soup
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup crushed Ritz crackers
2 tablespoons melted butter
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a large pot, bring water to a boil. Add the broccoli, cauliflower, and carrots. Cook for 5 minutes, then drain and set aside.
In a large bowl, combine the condensed cream of mushroom soup, sour cream, shredded cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well.
Add the cooked vegetables, frozen peas, and sliced mushrooms to the bowl. Stir until all the vegetables are well coated with the sauce.
Transfer the vegetable mixture to the prepared baking dish and spread it out evenly.
In a small bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle the cracker mixture evenly over the top of the casserole.
Bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
Let the casserole cool for a few minutes before serving.
