Blueberry Bread
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
1 1/2 cups fresh or frozen blueberries
1 tablespoon all-purpose flour (for coating blueberries)
Glaze (optional):
1/2 cup powdered sugar
2 tablespoons lemon juice
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
In a medium bowl, whisk together the 2 cups of flour, granulated sugar, baking powder, baking soda, and salt.
In a large bowl, beat the softened butter until creamy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, and mix until just combined.
In a small bowl, toss the blueberries with 1 tablespoon of flour to coat them. Gently fold the blueberries into the batter.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Glaze (optional):
In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
Drizzle the glaze over the cooled blueberry bread before slicing and serving.
