Classic Pecan Sandies

Ingredients:

1 cup unsalted butter, softened
1 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup pecans, finely chopped
1/4 teaspoon salt
Powdered sugar (for dusting)

Instructions:

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Stir in the vanilla extract.
Gradually add the flour and salt to the butter mixture, mixing until just combined.
Fold in the finely chopped pecans until evenly distributed throughout the dough.
Roll the dough into 1-inch balls and place them on the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the bottom of a glass or your palm.
Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden.
Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, dust the cookies with powdered sugar before serving.
