Creamy Tuna Pasta Salad
Ingredients
12 oz pasta (such as rotini or penne)
2 cans (5 oz each) tuna in water, drained
1 cup celery, chopped
1/2 cup red onion, finely chopped
1 cup frozen peas, thawed
1 cup mayonnaise
1/2 cup Greek yogurt
2 tablespoons lemon juice
1 tablespoon Dijon mustard
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to cool.
In a large bowl, combine the drained tuna, chopped celery, finely chopped red onion, and thawed peas.
In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until well combined.
Add the cooked pasta to the bowl with the tuna and vegetables. Pour the dressing over the pasta mixture and toss gently to coat all the ingredients evenly.
Garnish with chopped fresh parsley before serving
Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld.
