Crispy Mashed Potato Cheese Puffs
Ingredients:
2 cups mashed potatoes (leftover or freshly made)
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 large egg
1/4 cup all-purpose flour
2 tablespoons chopped green onions
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Vegetable oil for frying
Sour cream for serving (optional)
Instructions:
In a large bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, egg, flour, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Heat vegetable oil in a large skillet over medium-high heat.
Scoop tablespoons of the potato mixture and form into small balls.
Carefully place the potato balls into the hot oil, flattening them slightly with a spatula. Fry for 2-3 minutes per side, or until golden brown and crispy.
Remove from the skillet and drain on paper towels.
Serve warm with a dollop of sour cream, if desired.
