Fluffy Homemade Pita Bread
Ingredients:
3 cups all-purpose flour
1 1/2 teaspoons salt
1 tablespoon sugar
1 packet active dry yeast
1 1/4 cups warm water
2 tablespoons olive oil
Instructions:
In a large bowl, combine the flour, salt, and sugar.
In a separate small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy.
Pour the yeast mixture and olive oil into the flour mixture. Stir to combine until a dough forms.
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Preheat the oven to 475°F (245°C) and place a baking stone or baking sheet in the oven to heat.
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball, then roll out each ball into a circle about 1/4 inch thick.
Carefully place the rolled-out dough onto the preheated baking stone or sheet. Bake for 3-4 minutes until the pitas puff up and are lightly browned.
Remove from the oven and cover with a clean towel to keep them soft.
