For the Cookie Base:

1 1/2 cups all-purpose flour

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar

1 large egg

1 teaspoon vanilla extract

For the Vanilla Cream Filling:

1 cup milk

1/4 cup granulated sugar

2 tablespoons cornstarch

1/4 teaspoon salt

2 large egg yolks

1 teaspoon vanilla extract

1 tablespoon unsalted butter

For the Chocolate Ganache:

1/2 cup heavy cream

1 cup semi-sweet chocolate chips

Preheat oven to 350Ā°F (175Ā°C). Line a muffin tin with paper liners.

In a medium bowl, whisk together flour, baking soda, and salt.

In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy. Add egg and vanilla extract, and mix until combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Scoop about 1 tablespoon of dough into each muffin cup, pressing it down slightly to form a base. Bake for 10-12 minutes, or until the edges are lightly browned. Allow to cool completely.

While the cookies are cooling, prepare the vanilla cream filling. In a medium saucepan, whisk together milk, sugar, cornstarch, and salt over medium heat. Cook, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat.

In a separate bowl, whisk egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs. Return the egg mixture to the saucepan and cook over medium heat until thickened. Remove from heat and stir in vanilla extract and butter. Allow to cool completely.

To make the chocolate ganache, heat the heavy cream in a small saucepan until it begins to simmer. Pour the hot cream over the chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until smooth.

Assemble the cookie bites by spooning a small amount of vanilla cream filling onto each cookie base. Top with a dollop of chocolate ganache.

Refrigerate the cookie bites for at least 30 minutes before serving.
