Filipino-Style Savory Beef Tapa
Ingredients:
1 lb beef sirloin or flank steak, thinly sliced
1/4 cup soy sauce
1/4 cup calamansi juice (or lemon juice)
2 tablespoons brown sugar
4 cloves garlic, minced
1/2 teaspoon ground black pepper
1/4 teaspoon salt
2 tablespoons vegetable oil
Instructions:
In a large bowl, combine the soy sauce, calamansi juice (or lemon juice), brown sugar, minced garlic, ground black pepper, and salt. Stir until the sugar is dissolved.
Add the thinly sliced beef to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated beef slices in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes on each side, or until the beef is cooked through and slightly caramelized.
Remove the beef from the skillet and drain on paper towels.
Serve the beef tapa hot with garlic fried rice and a sunny-side-up egg.
