Flavorful Garlic Chicken Fried Rice
Ingredients:
2 cups cooked rice (preferably day-old)
1 lb chicken breast, diced
3 tablespoons vegetable oil, divided
6 cloves garlic, minced
1 small onion, finely chopped
1 cup frozen peas and carrots, thawed
2 large eggs, beaten
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
3 green onions, sliced
Salt and pepper to taste
Instructions:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add diced chicken breast and cook until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.
In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and finely chopped onion, and sauté until fragrant and the onion is translucent.
Add the peas and carrots to the skillet and cook for 2-3 minutes, until heated through.
Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix with the vegetables.
Add the cooked rice to the skillet along with the cooked chicken. Pour in soy sauce, oyster sauce, and sesame oil. Stir everything together until well combined and heated through.
Season with salt and pepper to taste. Garnish with sliced green onions before serving.
