Golden Potato Cakes with Savory Filling
Ingredients:
4 large potatoes, peeled and boiled
1 cup shredded cheese
1 cup finely chopped cooked ham
1/2 cup finely chopped green onions
1/4 cup all-purpose flour
1 egg, beaten
Salt and pepper to taste
1/4 cup vegetable oil for frying
Instructions:
Mash the boiled potatoes in a large bowl until smooth.
Add the shredded cheese, chopped ham, green onions, flour, beaten egg, salt, and pepper to the mashed potatoes. Mix well until all ingredients are combined.
Take a handful of the potato mixture and shape it into a patty. Repeat with the remaining mixture.
Heat the vegetable oil in a large skillet over medium heat.
Fry the potato cakes in batches, cooking each side for about 3-4 minutes or until golden brown and crispy.
Drain the cooked potato cakes on paper towels to remove excess oil.
Serve warm and enjoy!
