Juicy Slow Cooker Rotisserie Chicken
Ingredients
1 whole chicken (4-5 lbs)
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 lemon, quartered
4 cloves garlic, peeled
Instructions
Rinse the chicken inside and out and pat dry with paper towels. Remove any giblets.
In a small bowl, mix together the olive oil, salt, black pepper, paprika, garlic powder, onion powder, dried thyme, and dried rosemary to create a seasoning paste.
Rub the seasoning paste all over the chicken, making sure to cover it evenly.
Stuff the cavity of the chicken with the lemon quarters and garlic cloves.
Place the seasoned chicken breast-side up in the slow cooker.
Cover and cook on low for 6-7 hours, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
For crispy skin, transfer the cooked chicken to a baking sheet and place it under the broiler for 3-5 minutes, watching carefully to avoid burning.
Let the chicken rest for 10 minutes before carving and serving.
