Meatloaf Cupcakes with Creamy Potato Frosting
Ingredients
For the Meatloaf:
1 pound ground beef
1/2 cup bread crumbs
1/4 cup milk
1/2 cup finely chopped onion
1/4 cup finely chopped bell pepper
1 egg
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
For the Whipped Potato Topping:
3 cups mashed potatoes (about 4 medium potatoes)
1/4 cup sour cream
1/4 cup milk
2 tablespoons butter
Salt and pepper to taste
Fresh chives, chopped (for garnish)
Instructions
Preheat oven to 375°F (190°C). Line a muffin tin with cupcake liners or grease with cooking spray.
In a large bowl, combine all meatloaf ingredients and mix until well combined.
Divide the meat mixture evenly among the muffin tin cups, pressing down slightly.
Bake for 20-25 minutes, or until the meatloaf cupcakes are cooked through.
While the meatloaf cupcakes are baking, prepare the whipped potato topping. In a medium bowl, mix the mashed potatoes, sour cream, milk, and butter until smooth and creamy. Season with salt and pepper to taste.
Once the meatloaf cupcakes are done, remove them from the oven and let them cool slightly.
Pipe or spoon the whipped potato topping onto each meatloaf cupcake.
Garnish with fresh chives and serve immediately.
