Peanut Butter Stuffed Mini Reese’s Pieces Cookies
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup mini Reese’s Pieces
1/2 cup creamy peanut butter
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs, one at a time, then stir in the vanilla.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the mini Reese’s Pieces.
Scoop out tablespoon-sized portions of dough and flatten each slightly. Place a small dollop of peanut butter in the center of each and fold the dough around it to form a ball.
Place the dough balls on the prepared baking sheet and bake for 10-12 minutes, or until edges are lightly golden.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
