Savory Tex-Mex Skillet with Ground Beef and Potatoes

Ingredients:

1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
2 large potatoes, diced
1 can (14.5 oz) diced tomatoes with green chilies
1 cup corn kernels (fresh, canned, or frozen)
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
Fresh cilantro, chopped (for garnish)

Instructions:

In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onion, garlic, and green bell pepper to the skillet. Cook until the vegetables are tender, about 5 minutes.
Stir in the diced potatoes and cook for another 5 minutes.
Add the diced tomatoes with green chilies, corn, chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine.
Cover the skillet and let it simmer for 15-20 minutes, or until the potatoes are tender.
Sprinkle the shredded cheddar cheese over the top and cover until the cheese is melted.
Garnish with fresh cilantro before serving.
